How to Make Egg Salad: A Simple and Nutritious Meal

Ingredients for egg salad:

150 g potatoes
160 g green beans
160 g peas
3 eggs
160 g lettuce cut into larger pieces
Sauce ingredients:

1 tablespoon olive oil
2 teaspoons vinegar
1/2 teaspoon mustard powder
2 tablespoons chopped mint
3 tablespoons chopped basil
1 clove garlic, crushed
1 tablespoon capers (optional)
How to make egg salad step by step:
Cook the potatoes in boiling water for 5 minutes.
Add the green beans to the potatoes and cook for another 5 minutes. Then add the peas and cook for another 2 minutes, or until all the vegetables are tender.
Boil the eggs in a separate pot for 8 minutes. When they are cooked, rinse them under cold water and peel them.
Mix all the dressing ingredients in a bowl, making sure to add freshly ground pepper and chopped herbs.
Toss the cooked vegetables with the dressing, then add the salad and continue to mix.
Transfer the salad to a bowl, slice the boiled eggs (if desired), and arrange on top. Sprinkle with a pinch of freshly ground black pepper for flavor.
