This dish consistently impresses my dinner party guests.

Step 1: Prep & Roast Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper until well coated. Spread the potatoes in a single layer on a baking sheet and bake for 20-25 minutes, or until they are tender and golden brown.
Step 2: Combine Ingredients: In a large mixing bowl, combine the baked potatoes, crumbled bacon, 1 ½ cups of cheddar cheese, sour cream, and half of the green onions. Mix until everything is well combined.
Step 3: Assemble & Bake: Transfer the mixture to a greased 9×13-inch baking dish. Pour the melted butter evenly over the top of the potato mixture. Sprinkle the remaining ½ cup of cheddar cheese over the top. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Step 4: Serve: Garnish with the remaining green onions before serving.
