Slow Cooker Sweet Potatoes

Ingredients

4 large fresh sweet potatoes

1/2 cup brown sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

4 tablespoons butter (or vegan butter)

1 cup marshmallows

Salt and pepper to taste
Directions
Wash and peel the sweet potatoes, then cut them into uniform slices.
In a bowl, mix brown sugar, cinnamon, nutmeg, salt, and pepper.
Layer the sweet potato slices in the slow cooker, sprinkling the sugar and spice mixture between each layer.
Dot the top layer with butter and cover the slow cooker.
Cook on low for 4-5 hours until the sweet potatoes are tender.
Just before serving, add a layer of marshmallows on top and broil in the oven until they are golden brown and gooey.
Serve hot and enjoy the melange of flavors in every bite.
