Make the custard: In a large bowl, whisk together eggs, milk, salt, pepper, and desired seasonings. This mixture will create a creamy filling that sets while baking.
Assemble the pie: Line a pie dish with the crust, pressing firmly into the edges. Layer the cooked sausage and sautéed onion evenly in the crust, then sprinkle shredded Monterey Jack cheese over the top.
Pour custard: Carefully pour the egg and milk mixture over the filling, making sure it’s evenly distributed.
Bake: Place the pie in a preheated oven at 350°F (180°C) and bake for 30-35 minutes, or until the filling is set and the top is golden brown.
