Instructions
1. Prepare the Oven & Pan
Preheat oven to 350°F (175°C).
Grease and line a 9-inch (23 cm) round cake pan.
2. Mix the Wet Ingredients
In a bowl, whisk eggs and sugar until pale and slightly fluffy.
Add oil (or melted butter) and vanilla; mix until smooth.
3. Combine Dry Ingredients
In a separate bowl, whisk flour, baking powder, cinnamon, and salt.
4. Make the Batter
Gradually fold dry ingredients into the wet mixture until just combined.
Gently fold in the apples.
5. Bake
Pour batter into prepared pan and smooth the top.
Bake for 40–45 minutes, until golden and a toothpick comes out clean.
6. Cool & Serve
Let cool for 10 minutes, then remove from pan.
Dust with powdered sugar before serving.
