While the meatloaf cupcakes are baking, prepare the whipped potato topping by boiling and mashing the potatoes with butter, milk, and salt.
Transfer the mashed potatoes to a piping bag and pipe them onto the cooked meatloaf cupcakes.
Optionally, sprinkle grated cheddar cheese on top of the potato topping.
