Homemade walnut, apple and banana cake

Step-by-step preparation:
Preheat the oven to 180°C (350°F). Grease and flour three 9-inch round cake pans.
In a large bowl, whisk together the eggs, sugar, oil, and vanilla. Add the mashed banana and mix well.
Sift together the flour, baking powder, baking soda, cinnamon, and salt. Gently fold in the dry ingredients with a spatula, being careful not to overmix.
Add the chopped apples and chopped walnuts. Gently fold until evenly distributed.
Divide the batter evenly among the three pans. Top with walnuts (distributed evenly).
Bake for 35 to 45 minutes, depending on the size of the pans. Test for doneness with a toothpick; it should come out clean.
Let the cakes cool in the pans for 10 minutes. Then carefully turn them out onto a wire rack to cool completely.
