Directions
Begin by making the pasta dough. On a clean work surface, mound the flour and create a well in the center. Crack the eggs into the well, add a drizzle of olive oil, and a pinch of salt.
Gently beat the eggs with a fork, gradually incorporating the flour from the edges of the well. Continue mixing until a shaggy dough forms.
Knead the dough for about 10 minutes until it becomes smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.
While the dough is resting, prepare the Bolognese sauce. In a large pot, brown the ground beef and Italian sausage over medium heat until fully cooked. Drain off any excess fat.
Add the chopped onion, carrot, celery, and garlic to the pot. Cook until the vegetables are softened.
Stir in the crushed tomatoes, tomato paste, red wine, beef broth, milk, bay leaves, and fresh basil. Season with salt and pepper to taste.
Simmer the sauce over low heat for at least 2 hours, stirring occasionally to prevent sticking. The longer the sauce simmers, the more flavorful it will become.
