Creamy Chicken and Carrot Paté

 In a blender or food processor, combine the shredded chicken, cooked carrots, cream cheese, and garlic (if using).
 Add salt, pepper, a drizzle of olive oil or lemon juice, and mayonnaise if you prefer a smoother texture.
 Blend until smooth and creamy.
 Taste and adjust the salt or acidity as needed.
 Serve chilled on whole-wheat toast, as a dip with vegetable sticks, or inside a wrap or sandwich.

Once I made it in a hurry and forgot to peel the carrot… my son said, “Mom, it tastes like the countryside!” 🌾😅 Now I always peel it, and we call it “orange love pâté”! 💛
