Blueberry Breakfast Cake

This soft and fluffy breakfast cake is packed with juicy blueberries and just the right amount of sweetness. Perfect for a cozy morning treat with coffee or tea, it also works great as a snack or light dessert.

Ingredients
Dry ingredients:

1½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

¼ teaspoon salt

Wet ingredients:

1 large egg

½ cup milk (or buttermilk for extra flavor)

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

Add-ins:

1 cup fresh or frozen blueberries (if frozen, do not thaw)

1 tablespoon flour (to coat the blueberries)

Optional topping:

1 tablespoon coarse sugar or brown sugar (for crunch)
